Buckwheat Soba Noodles in Creamy Cashew Avocado Sauce
Hello, friends! I hope that you are having a wonderful week. I am currently on day 18 of The Clean Program. I’ve had such a positive experience on the program and I will be making a full update about my experience soon. In the meantime, you can see my week one update right here.
Today, I want to share one of the meals that has been a staple for me throughout the program–Soba Noodles.
I am such a noodle person! The thought of living without noodles for 21 days while I was on the program was an impossibility for me. Luckily, I already had these clean-approved noodles in my pantry. I’ve been eating some variation of this dish at least a couple of times each week. It’s super-filling, incredibly nutritious, and of course delicious. So of course I have to share.
I make so many variations of this dish. Sometimes I include tahini, soy sauce, hummus, all different types of nuts, seeds and veggies. It all depends what I am in the mood for and what I have in my pantry. Today I will share the ingredients & instructions for the version pictured here.
Ingredients:
- buckwheat soba noodles
- vegetable stock
- almond milk
- 2 cups raw cashews
- 1 avocado
- 1/2 pint grape tomatoes, sliced in half
- sprouted pumpkin & sunflower seeds
- spices to taste (include or don’t include depending on your current dietary restrictions)
- turmeric
- Himalayan rock salt
- pepper
- garlic powder
Instructions:
- Cashew Avocado Sauce: Soak cashews in water overnight. Drain cashews. Discard water. Add cashews to blender. Peel and pit avocado. Add to blender. Add spices to blender. Blend until all ingredients are smooth. Add almond milk if needed to create creamy consistency.
- Soba Noodles: Cook noodles in vegetable stock according to package directions. Drain noodles leaving a cup of leftover stock on the side.
- Add noodles and cashew avocado sauce to a shallow pan over low heat. Mix all ingredients together. Slowly mix in leftover stock until your sauce reaches your desired consistency. Allow all ingredients to simmer together for 3 to 4 minutes. Serve warm. Top with seeds and tomatoes. Enjoy!
