Food Diary: Lunch – Homemade Avocado Hummus

I just wrote, “I can not believe that it’s been nearly a month since I started my new job!” But then I looked at the calendar and I realized that today is my ONE MONTH-iversary. My, how time flies when you’re blindingly busy, er… having fun! 😉 Seriously though, it has been an incredible experience thus far. I am working with a fantastic group of people, pushing my boundaries every day, and growing exponentially—personally & professionally.

However, there is one thing that has gone down the tubes in the last month, and that is my diet! With all of the new friends and the new restaurants (see: lunch specials) to be tried, my waistline and my pocketbook have taken a huge hit. All of that changed this week though. I’ve turned over a new leaf and have started to make delicious nutritious lunches at home.

This week’s staples have been Greek yogurt; homemade avocado hummus sandwiches; baby carrots; sun dried tomatoes; and fruit (clementines, apples, bananas). I am really in love (slightly obsessed, actually) with my homemade hummus recipe and thought I would share. It’s so GOOD & so EASY!

Ingredients:

  • 1 can chick peas
  • 2 table spoons extra virgin olive oil
  • pinch of salt
  • pinch of pepper
  • 1/2 lemon
  • 1/2 avocado (sliced)

Instructions:

Drain chick peas. Pour chick peas into a sturdy bowl. Mash chick peas with a fork. Add olive oil, salt, pepper. Squeeze lemon juice. Add avocado slices. Mash all ingredients together with fork. Et voila!

That’s it. Easy-peasy-lemon-squeeze-y! You can add it to a sandwich, use it as a dip for crackers, or eat it on its own. Either way it’s divine! If you try it, please let me know what you think. Happy Thursday, loves!

  1. Yep, that whole eating out at lunch can make a serious dent in the wallet and hard to keep a nutritious diet in place. My office used to be a mile from my house so I would go home for a good lunch. Then we moved 7 miles away, but, I could still get home at lunch. Now it’s 15 miles and I pack an apple, some peanuts and a diet coke and that is my lunch 4 days a week. The 5th day is Rotary so I have lunch there at the meeting and try to just eat the healthy goodies.

    1. An apple, some peanuts, and a diet coke??? You really are a robot, aren’t you? ;] I could not live on that, Lou. How long is your work day? I get in at 8 and typically finish around 5 or so.

      1. Yep, pretty much the robot Dude, I get in before 7:30 and out the door at 5 pm, then home for a nice glass of wine….medicinal, of course. 🙂
