A Simple Bowl of Veggie Ramen
When the temperature dropped last week, I found myself in full on “autumn” mode. I pulled our warm hoodies and denim out of the closet and I was craving soup. My favorite kinds of soup are thick & creamy ones full of spices that simmer for hours. But sometimes, I love a simple bowl of ramen too! Ramen is totally one of my comfort foods. This brand is my favorite.
Although I’ve been limiting myself from anything processed these days and sticking to raw, vegan for the most part, I still have my days where nothing but noodles will do the trick. (I’m not a fan of zucchini noodles unfortunately.) When I make ramen I try to at least add a little bit of nutrition to the mix by adding in seaweed, and raw, organic carrots and scallions. (This is the seaweed that I love. It works great for sushi, too!) I also use half a packet of the flavoring instead of a whole one, since it tends be high in sodium. If it needs some extra flavor I’ll add a few of my own organic herbs and powders in to spice it up.
What about you friends? What do you crave as the season begins to turn? I am not into pumpkin spice anything, which seems to be all the rage these days. However, give me all of the green tea lattes please!
