Food Diary: Sausage & Peppers Recipe
Recently, Matthew bought home chicken saltimbucco sausages from the farmer’s market. It just so happened that I also had three beautiful peppers in the fridge. It is a rare occasion that I cook meat (I cook vegetarian/pescetarian most of the time), but the stars aligned and sausage & peppers were on our menu that night.
I’d made sausage & peppers before, but I used the crock pot. This time I didn’t have 8 hours so I decided to use the frying pan. Plus, the sausages were precooked so that made it easy.
Ingredients:
- extra virgin olive oil
- 3 bell peppers (red, yellow, green)
- 2 yellow onions
- 1 package of sausages
- spices as desired
Instructions:
Coat a frying pan with a thick layer of olive oil. Heat. Chop onions & peppers. Sauté onions & peppers. Chop sausages into pieces. (If you’re using regular sausages, cook thoroughly!) Add sausages to your frying pan. Add spices. Sauté until sausages are slightly browned.
