Recipe: Easy Red + White Quinoa Stir Fry

This recipe is my “go-to” for anytime that I need something quick, easy, healthy, and delicious. You can make it using whatever you have in the house. The vegetables (onion, cabbage, carrot, celery) & the carbs (red & white quinoa) that I used can be swapped for your own favourites or for whatever you’ve got on hand.

Here’s what I used:

  • cooked quinoa (1 cup)
  • baby carrots (a handful)
  • celery (5 stalks)
  • 4 small onions
  • cabbage (quarter of a head)
  • extra virgin olive oil
  • soy sauce
  • orange juice
  • coconut milk
  • spices (salt, pepper, dill, cayenne)

Directions:

1. Cook quinoa — to cups of water to 1 cup of quinoa.
2. Dice vegetables.
3. Stir fry vegetables in a few tablespoons of olive oil until slightly tender.
4. Add in quinoa. Add a few splashes of orange juice, coconut milk, and soy sauce to taste. Stir in spices.
