recipe: eggs, raspberry jam + sourdough

Last week I discovered Trader Joe’s raspberry preserve and it is heaven in a jar. It inspired me to make the easiest — and most delicious — sandwich ever. Two slices of sourdough, toasted. Two eggs over easy. Spread jam generously over one slice of bread. Scoop eggs onto bread + smash sandwich together. YUM, YUM, YUM. | raspberry jam | raspberry jam

    ohhhhh yuuuuuum. I LOVE jam and bread, especially raspberry jam, especially sourdough. Interesting combo with the egg. If (more like when) I go back to eating eggs, I will try this. I don’t actually eat jam and bread very often, but when I do, I make a meal of it.

      during my pregnancy, i’ve been eating bread far too often — but i am allowing myself such treats now. i cannot believe that i am at 39 weeks and i feel so good. i thought that these last weeks would be hellish, but they’ve been joyful. (night and day from the first trimester, eh!) i am so grateful. i have gained a lot of weight, but that’s par for the course i suppose. i’m looking forward to getting really healthy again/fitting into my clothes(!) once he is born, as difficult as that may be. for now i am enjoying too much jam + bread, and other such deliciousness! xoxo
