Recipe: Stuffed Mushroom Caps
Thursday night’s supper was stuffed portabella mushroom caps + salad + corn on the cob. The mushrooms were delicious. If you’d like to make them yourself, you’ll need:
- 4 portabella mushroom caps
- boiled quinoa
- diced onion
- diced red bell pepper
- egg
- spices
- olive oil
- shredded cheese
Scramble and cook egg. Saute pepper and onion. Add quinoa and mix all ingredients together. Add olive oil and spice to taste. Sprinkle a layer of cheese over mushroom caps. Scoop stuffing onto caps. Sprinkle with one more layer of cheese. Bake on 350° until cheese is melted and slightly crisped, about 20 minutes. Enjoy!

Thanks, Henri! Not Instagram. I use a Canon Rebel T3i and then some post-work in Photoshop. Depends on the photographs though, if they’re very pretty I won’t do any editing at all. Thanks for stopping by.
