Food Diary: Grilled Vegetables & Cheese Panini
We got a shiny new Panini Maker for Christmas! 🙂 I’ve been so excited about it because paninis are my favourite. There is a restaurant nearby that makes a grilled veggie & cheese panini that I can’t get enough of. So I thought I’d try to make it myself. The result was amazing! My paninis didn’t come out quite as pretty as the restaurant’s—but they were every bit as delicious.
Ingredients:
- extra virgin olive oil
- 3 bell peppers (red, yellow, green)
- 1 yellow onion
- 2 portabella mushroom caps
- 4 slices sourdough bread
- fresh mozzarella cheese
- crumbled feta cheese
Instructions:
Coat a frying pan with a thick layer of olive oil. Heat. Chop onions, mushrooms & peppers. Sauté onions, mushrooms & peppers. Sauté until veggies are cooked but still crisp.
Place one slice of bread on Panini Maker. Add vegetables. Sprinkle feta cheese over vegetables. Top off with two slices of mozzarella and 2nd slice of bread. Close Panini Maker lid. Cook until bread is crisp and cheese is melted.
Bon Appétit! We’ve got lots of leftover veggies, so tomorrow night I’m going to try this recipe and add some ‘fakin bacon to the mix. Yummy!
