Here is a quick, healthy + easy stir fry recipe for you. You can use any grain that you have on hand like rice or pasta. I used a leftover quinoa and wild rice mix that I had from the day before.

You’ll need:

  • broccoli crowns
  • mushrooms
  • tofu
  • cooked grains
  • soy sauce

Add the mushrooms and the broccoli to a wok with a bit of extra virgin olive oil or vegetable stock. Heat on medium, stirring frequently, until mushrooms and broccoli are tender. Strain out excess liquid from the vegetables. Add cooked grains and tofu. Flavor with soy sauce. Simmer on low heat, stirring often, until soy sauce is absorbed.
