Food Diary: June & July

It’s no secret that I love food, but what you may not know is that I also like to take pictures of it. As a part of my ongoing commitment to fitness, I’ve decided to start sharing my favourite healthy culinary creations with ya’ll in a new Food Diary series. Bon appetit!

Meal 1: Organic Pasta, Tofu Sticks, & Salad

The pasta & the vodka sauce are both organic, delicious Trader Joe’s products. I try not to eat pasta too often, but when I do I stick with organic. The salad is also Trader Joe’s organic and from a bag. I admit that I almost always get pre-washed salad in a bag. It’s so much easier that way! 😉

My favourite part of this meal was a brand new creation that I decided to try on a whim. See, I am obsessed with mozzarella sticks. Mozzarella sticks are definitely one of my top 5 fave foods. But I’ve been trying to avoid dairy as much as possible. I had a package of tofu in the fridge and decided to experiment. Here is my recipe if you’d like to give it a try.

  1. Cut one package of tofu into sticks.
  2. Scramble one egg in a bowl.
  3. Fill another bowl with bread crumbs.
  4. Coat a frying pan with a thick coat of extra virgin olive oil & heat.
  5. Dip tofu sticks in egg, then in breadcrumbs, then fry them up until all sides are golden brown.
  6. Dip in your fave sauce & enjoy!

Meal 2: Veggie Soy-Cheese Burgers & Steamed Broccoli

Cheeseburgers are one of the all-time best summertime foods! Right? However, I tend to avoid beef like the plague and as I mentioned above, I’m staying away from dairy too. Thing is, I’ve been craving a delicious burger. So once again, I decided to get creative.

The burgers are MorningStar veggie burgers (so good!) and the cheese is soy-cheese. The buns are Trader Joe’s whole wheat. I toasted them in the oven to melt the cheese. To really jazz up those burgers I added sauteed onions and a squirt of ketchup & honey mustard. Seriously, it was one of the best burgers I’ve ever had.

Meal 3: Anything from the Garden!

We decided to plant a vegetable garden again this year. There is really nothing else in the world like fresh veggies from your own backyard. This year we planted tomatoes (plum & cherry), cucumbers, green peppers, and blueberry bushes.

Of course I had to document my first meal featuring cucumbers from our garden.  Tofu spaghetti, organic marinara, and salad with home-grown cucumber slices.

    Andrew showed me your site and I love it. I am glad he was in the mood to share the love. I am doing a raw vegan challenge right now so I can’t enjoy these same foods but I just planted a veggie garden so I can relate there. Looking forward to reading about the journey.
